Honey Process
Whole coffee cherries are placed into sealed tanks to ferment in an anaerobic or near-anaerobic environment. After the initial fermentation, the cherries are depulped removing the skin and the pulp while intentionally retaining some of the mucilage.
The beans are then immediately moved to drying beds to be sun dried until the process is complete
